Making a berry compote is a good way to increase the shelf life of these delicate fruits. Fantastic on ice-cream or soft centred choc puddings (see related recipe).
Mix Berry Compote Recipe:
Ingredients:
300g blueberries
200g raspberries
(or whatever berries you can get your hands on)
50g sugar
1/4 cup water
a squeeze of lemon juice
Bring water to boil in a saucepan. Add sugar and stir until dissolved. Add berries and bring to a boil. Finally add the lemon juice. leave to cool. Store in an airtight container.
