Banana Cake-Take 2



After the disasterous first attempt, I had many kind offers of banana cake recipes from different people. This came from Why, who came to the rescue. Needless to say, Step Alexander's recipe was a success. I reduced the sugar to 1 cup and topped the cake with cream cheese whipped with a few tbsp icing sugar and a couple drops of lemon juice.

Banana Cake Recipe (adapted form Stephanie Alexander)

125g soften unsalted butter
1.5 cups brown sugar
2 eggs
1 cup mashed ripe banana
1/2 tsp vanilla paste
250g plain flour
1 tsp bicarbonate of soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 cup buttermilk

Preheat oven to 180C. Butter and line 8 inch round tin.
Cream butter and sugar until pale and fluffy, then beat in eggs and banana and vanilla. Sift in dry ingredients, alternate with buttermilk. Bake for 50-60 mins. Cake is cooked when skewer comes out clean.
